Quick carrot and super spinach side salads
Quick and simple salads seem so hard to attain, but here's exactly how to make vegetables and salads fun for little ones, kids and teens.
: 5 minutes
: 4 servings
Handful of spinach
6 mixed tomatoes
3 tbslp olive oil
Handful of rosemary
Handful of basil
Wash the spinach and tomatoes and set aside.
Peel the carrots using a peeler, into a bowl
Add the rosemary and oil.
Toss and set aside.
Transfer the spinach to a seperate plate and squeeze over the juice of half of the lemon.
Add the olive oil and black pepper.
Chop the carrots in half, lengthways - however you like.
Add the tomatoes to the salad, making a funny face as you go.
Serve the salads side by side - ready to enjoy with a main dish.
If you're serving teens however, you might want to toss this salad.
