Quick Bean Snack

Here's a fibrous, tasty, slightly spicy, gluten-free coconut-oil fried, bean snack. It's delicious.



Preparation Time: 2 minutes
Cooking Time: 15 minutes
Makes: 2 servings

Ingredients
Tin of mixed beans: haricot, kidney, chickpeas
Tsp ground paprika
Tblsp coconut oil
2 garlic cloves
Pinch fresh thyme and rosemary

Method
Add the beans, garlic and oil to a frying pan and cook over a low heat for 2 minutes.



Add the seasoning and cook for a further 2 minutes.



The beans should be coated and soft after another 5 minutes cooking.



Add the kale.



Serve after 5 minutes in the pan.



Alternatively top with yogurt, if you prefer it not so hot.
