In can be difficult to come up with a side that is both healthy, tasty and adds variety to your evening meals. Relax! I’ve got the perfect recipe for you and best of all this colourful, healthy, side dish is quick and easy to prepare.
Preparation Time: 5 minutes
Cooking Time: 15 - 20 minutes
Makes: 4 side servings
Ingredients
1 zucchini
1 red capsicum
1 cob of corn
1 large clove of garlic
3 slices of shortcut rind less bacon
Method
Cut the zucchini and capsicum into bite size pieces. Use a sharp knife to remove the corn kernels from the cob. Crush the garlic.

Although frozen corn would work just as well in this recipe, don't be afraid to use fresh kernels. Just remove the husk, stand the cob on one end and slide down the side of the cob with a sharp knife.
Heat a large frying pan over medium heat. Add a splash of olive oil and slide in the vegetables. Cook until zucchini and capsicum begin to soften, stirring occasionally. In the meantime, cut the bacon into bite size pieces.
Once the vegetables have begun to soften, add the bacon. Cook until the vegetables are tender and the bacon is nicely browned and cooked through. Serve as a side.
