Rich and creamy peanut butter fudge with a salty twist that's quick and easy to make, no stove needed!
Preparation Time: 10 minutes
Chilling Time: 30-60 minutes
Makes: 12 servings - the batch is small (it only fills about half a slice tin) but the fudge is very rich.
Ingredients 125 g smooth peanut butter
115 g butter
1/2 teaspoon vanilla extract
1/8 teaspoon salt (to taste)
2 cups icing sugar, sifted.
Line a slice tray with silver foil, leaving plenty poking out the sides to wrap the fudge in.
Melt together the butter and peanut butter. Doing this in the microwave is the easiest way - microwave on high in 20 second bursts and stir between bursts until the mixture is smooth.
Add the vanilla extract and salt. Mix well to combine.
Add the icing sugar. Stir the mixture together until everything is well combined. The mixture ends up being fairly thick and cookie dough-like.
Press the mixture into the slice tin. I used my hands to do this because a spoon just wasn't doing the job - better to jump in and get a little dirty. Also, this recipe only makes a mixture enough to fill about half a slice tin . I did this because the fudge is so rich, sugary and delicious that I would probably end up devouring the lot before rethinking! If you are after a larger batch, simply double the amount of each ingredient.
Wrap the fudge up tightly in its silver foil. Leave it in the fridge to chill for at least 30-60 minutes (ideally 3 hours or overnight) until the fudge is firm.
