Quick and easy honey, banana and poppy seed lunch box muffins
These muffins make an easy and delicious addition to lunch boxes!

1 1/2 cup plain flour
1 teaspoon baking soda
1 cup granulated sugar
1/2 teaspoon salt
1/4 cup milk
2 eggs, lightly whisked
1/3 cup olive oil
3 bananas, mashed
1 teaspoon lemon juice
1/4 cup honey
2 tablespoons poppy seeds
Preheat the oven to 180 C. Lightly grease a 12 patty cupcake baking tray.
In a mixing bowl, combine the flour, baking soda, sugar, and salt.
Add the eggs, milk, olive oil, and honey. Stir until the flour is just combined.
Mash the bananas until creamy. Add the lemon juice and stir until well combined. The lemon juice will help keep the bananas from browning.
Add the banana mixture to the muffin batter and stir it in.
Fill the cupcake baking tray with batter, to about 2/3 full.
Bake for 15-20 minutes, or until cooked when tested with a skewer.
Allow the muffins to cool in the tray for about 5 minutes, then transfer them to a wire rack to cool completely.
