Quick and Easy Banana Cake in a Mug

For when you grab a moment to yourself and are in dire need of a quick cake fix! Or when the sweet treats run out.
: 3 minutes
: 1-2 minutes
: 2 servings
1 tablespoon vegetable oil
2 tablespoons milk
1/2 teaspoon vanilla extract
1/4 cup brown sugar
1/2 cup self raising flour
Pinch of ground cinnamon
Pinch of salt
In a mixing bowl, whisk together the egg, oil, and sugar.
Add the vanilla extract, salt, and cinnamon and stir through.
Add the milk and stir through.
Fold in the flour.
Chop the banana into small chunks and fold these through the cake batter.
Spoon the batter evenly between 2 microwave safe cups or mugs.
Microwave each separately, on high, for 1 minute. Each microwave is different, so check to see how well the cake is cooked after the 1 minute, then cook in further 15 second bursts until cooked.
Top with icing made from a mixture of 1 cup icing sugar, 1/2 cup butter, and 1 teaspoon vanilla extract.
Serve immediately, while still warm.
