Quick 2-Minute Satay Noodle Stir Fry

A delicious satay stir fry using 2-minute noodles, for when the pantry (and clock) is running low!



Preparation Time: 10 minutes
Cooking Time: 10 minutes
Makes: 2 servings

Ingredients
2 packets instant (or 2-minute) noodles
3 teaspoons sesame oil
1/2 red capsicum
1 medium carrot
1 cup broccoli florets
1 tablespoon soy sauce
2/3 cup store bought satay sauce

Method
Cook the instant noodles according to their packet instructions. Drain the noodles and set these aside.

Slice the capsicum and carrots, and chop the broccoli florets into bite sized chunks.

Heat the sesame oil in a wok or frying pan over medium heat. Stir fry the capsicum, carrot, and broccoli for 2-3 minutes. Add a sprinkling of sesame seeds.





Add the soy sauce and cooked noodles. Toss these together.



Transfer the noodle stir fry to a bowl and cover with silver foil to keep it warm.



In a saucepan, heat the satay sauce - stirring - for about 30 seconds to heat it through. Pour the satay sauce over the noodle stir fry and sprinkle over with sesame seeds to serve.
