Colour can turn a boring meal into a fun one, add some eggs and you've got a healthy, protein-rich dish which kids will love. Eggs are a cheap alternative if you're strapped for cash - they're filling and contain the nine amino acids required for growth and repair.

Ingredients
Item 1 bunch of kale
Half a red/purple cabbage head
2 eggs
5 spring onions
Method
Thoroughly wash the cabbage and place in a saucepan of boiling water for 10 minutes.
Slice the spring onions equally.
Wash the kale and place in a sieve on top of the saucepan.
Fry the spring onions over a low heat for 10 minutes.
Remove the vegetables from the saucepan and crack the egg into the cabbage-infused water.

Remove the egg from the saucepan and place on top of the cabbage - it will have turned blue.
For a meal which only requires four minutes and no seasoning you'll be surprised at how tasty it is. Tuck in.
