Low and slow works here: proper chicken soup takes time and is totally worth the effort: a meal for three days, easily.

Makes: 5 servings
Ingredients
4 chicken legs or 2 thighs 2 legs
Tsp curry powder
2 red onions
2 celery sticks
2 large carrots
2 tblsp coconut oil
Bunch of fresh parsley
3 sprigs of thyme
Method
Chop the onions and transfer to a frying pan with the oil and herbs. Cook for 5 minutes.
Add the chicken to a separate large pan and sear for 5 minutes.
Add the remaining ingredients and transfer the fried onion herbs to the large pan, and stir.
Add water, cover with a lid and allow to simmer on low for 2 hours.
Remove the lid to check on the soup - it should be thick and soup-like.
Take the meat off the bones, and serve in bowls.
