Quick Gluten-Free Tuna and Bean Lunchbox

Beans and tuna go together surprisingly well. Combine these tinned, lunchbox favourites and you've got an easy to whip up, protein and fibre-rich meal that will keep little ones (and adults), full.

Preparation Time: 5 minutes
Makes: 5 servings

Tin of kidney beans
Tin of chickpeas
Tsp ground black pepper
Fresh corriander leaves
Half a lemon
Tin of tuna chunks 500g
Red pointed pepper
2 garlic cloves

Add the tuna to a bowl along with the seasoning.

Wash the beans and transfer to a bowl. Mash lightly using a fork - keep half of the beans whole.

Combine all of the ingredients and store in little lunch boxes/tupperware/jars.
