Raw almond butter cups

These raw almond bites are a piece of heaven. They are so delicious and do not taste healthy at all but are full of natural, raw ingredients. The perfect little treat for dessert without all the guilt!

Preparation Time: 20 minutes
Cooking Time: refrigerated time
Makes: 10 servings


For base:
3/4 cup raw almonds (ground in to flour) or almond meal
1/4 cup rolled oats, ground into a flour
2 Tbsp raw almond butter
1 1/2 Tbsp coconut oil
1 1/2 Tbsp of pure maple syrup (or rice malt syrup)
1/4 tsp cinnamon
1/4 tsp pure vanilla extract
pinch of fine sea salt

Chocolate layer:
3 Tbsp coconut oil
3 Tbsp pure maple syrup (or rice malt syrup)
2 Tbsp cocoa powder
pinch of fine sea salt

Line a muffin tin with cupcake liners.
Place oats and almonds in to the food processor and blend until the mixture resembles a flour consistency. Transfer to a large bowl.
Add coconut oil, maple syrup, almond butter, vanilla, cinnamon and salt to mixture. Combine until it forms a sticky dough.
Press mixture in to cupcake liners. Smooth down with the back of a spoon. You can crumble some almonds on top for decoration if you wish! *Mix chocolate ingredients together in a bowl until nice and smooth.
Spoon evenly over the butter cup bases and smooth out.

NOTE: If wanting to eat straight away, put in the freezer for 20 minutes to firm up. If storing them for the next day, keep in the fridge and they will firm up nicely.
