Healthy Energy Balls

These little balls of goodness contain NO refined sugar, butter or oils. They are so delicious and taste like truffles yet they are totally healthy and perfect for when you're craving a sweet treat. Easy to make as well and all you need is a blender or food processor. Enjoy! x x

Preparation Time: 15 minutes
Cooking Time: 2hrs cooling time
Makes: 10-12 balls

1 1/2 cups of chopped pitted dried dates.
1 1/2 Tbsp of cocoa powder
3/4 cup of flaked almonds
1 Tbsp of skim milk powder
1 cup of shredded coconut
1/2-1 Tbsp of water

Line a baking tray with baking paper.
Place dates, cocoa powder, almonds and skim milk powder in blender and process until well combined.
Spoon mixture in to a bowl and add 1/2 Tbsp of water to bring the mixture together so that you can form the balls. If you need more water, add it a little at a time until you can form the balls.
Spread the coconut on a flat plate. Roll mixture in to 10-12 balls and roll in the coconut. You can also roll in flaked almonds for something different. If you’re having trouble getting the coconut to stick then brush the balls lightly with a little water and that should help. I also left some without coconut because I added a bit of coconut in the mixture with them. You can add a coconut in the mixture as well if you love it like I do!
Place the balls on the baking tray and put in the fridge to set for at least 2 hours until firm. Serve!

NOTE: You can find milk powder at your supermarket in the long-life/condensed milk section.

You don't need to roll them all in coconut. I left some plain and you can also add in coconut to the mixture.
