Fresh basil, bright tomatoes and a healthy helping of balsamic - nothing says Italy than those ingredients, and they make up great additions to this salad.
This recipe works great with fried chicken as a fresh respite.
Preparation Time: 5 minutes
Makes: 2 servings
Ingredients
1 beef tomato/large tomato
Handful of spinach
Fresh rosemary
6 basil leaves
1 lemon
Olive oil glug
Half tsp black pepper
Tblsp balsamic vinegar

Required ingredients
Method
Add the vinegar to a bowl and squeeze in the lemon juice.
Add the rosemary and pepper.
Wash and slice the spinach leaves roughly. Place in a large salad bowl.
Add the spinach and tomato to the jar of dressing. Combine and serve alongside any main as a healthy side salad.
