Prawn & Chutney Pasta

I don't cook pasta very often, so I find it pretty pointless buying jars of pasta sauce that will sit in the cupboard taking up room for ages. Once opened, anything that isn't used then ends up getting wasted. As an alternative to pasta sauce, I use chutney as a substitute, which works just as well.

This healthy pasta provides protein, carbohydrates, and helps kids on their way to five a day. It makes two child friendly sized portions at about 328 each.

Preparation Time: 10 minutes
Cooking Time: 15 minutes
Makes: 2 servings

Ingredients
120g bucatini pasta
100g cooked king prawns
80g white mushrooms
40g sweet red bell pepper
40g mange tout
5 tbsp Tomato Chutney
1/2 tsp ground basil
1/2 tsp ground parsley

Method



Cook the pasta on the hob by bringing water to the boil, and then leaving it to simmer for ten minutes, or until suitably soft.



Chop all the vegetables and mix with the prawns.



Cook in a sauce pan at a low heat until they start to sizzle.



Stir in four tablespoons of chutney.



Drain the pasta, then add it to the saucepan.



Mix in the basil, parsley, and last tablespoon of chutney.
