This could be a way of disguising some salad ingredients for children who do not readily eat them.
Add more eggs or potato if they like any of the ingredients, or you can use the basic recipe and put in whatever you like.
You could even serve it with tomato sauce instead of mayonnaise, as most children like this.
You could also cook some pieces of bacon to give this more flavour.

Ingredients
1 potato
1 hard boiled egg
½ carrot, grated or sliced
1 stick celery, sliced
1 small tin John West tuna in springwater
1 spring onion (optional)
Raddish, chopped (optional)
Baby rocket or lettuce, or baby spinach
Mayonnaise
Method
Cut the potatoes up to the size you want them and boil them in a bit of water for about 5 - 10 minutes or until just tender.
While doing this, also boil the egg.
While the potatoes are still warm, add them and the chopped egg into a dish with the mayonnaise -I used wasabi mayonnaise. The flavour then sinks into the potato. Carefully stir through and mix.
Add the celery, white raddish, spring onion, and baby rocket.
Next add the tuna and carrot.
Plate this and if using, put the tomato sauce on the side for the children to dip the food into.
