Summer evenings are brighter with tropical fruit salads that combine vegetables and seasonal fruits. Kids love them.
Preparation Time: 10 minutes
Makes: 4 servings
Ingredients
3 carrots
5 radishes
6 asparagus spears
Tbsp bee pollen
1 nectarine
3 mustard greens leaves
Handful spinach
Half a lemon
Rosemary sprig
Method
Slice the radishes finely.
Scrub the carrots then using a peeler, peel into ribbons in a salad bowl.
Remove the woody ends of the asparagus and add to the bowl along with the nectarine, roughly chopped.
Add the balsamic and toss.
Garnish with the bee pollen and serve.
