Pink Berry Smoothie

Kids rarely get enough fruit in their diets, and when you're faced with a large bowl of fruit it can look a bit daunting for little ones, so why not make it a bit easier by turning big chunks of fruit into a bright smoothie?



This smoothie is a perfect in between meals filler when lunch or dinner is not quite ready. The hidden ingredient - avocado - makes the drink a full of fibre, so the kids are enjoying an even healthier fruit smoothie.

Preparation Time: 2 minutes
Cooking Time: 0 minutes
Makes: 2 servings

Ingredients
200ml of coconut water,
Half a ripe Jamaican avocado,
100g of mixed berries (frozen or fresh),
1 ripe banana

Required ingredients


Method
Halve the avocado and place the one half aside (you only need half).



Wash the berries then place all of the ingredients in a blender.



Pour in the coconut water.



Blitz until smooth.



Pour into kid-sized cups, or pour into a large jug which you can keep in the fridge, then serve little ones as and when they'd like it.



Ideally consume the smoothie within an hour of making it, or at least within 24 hours because the enzymes are 'alive' whilst fresh.
