Perfect Roast Pork

If you like pork crackling, you will love this pork toast.

Our kids love pork and Sunday roast consists of yummy pork from which we have left overs for the rest of the week.

The secret to this roast is to cook it on high for the first 40 minutes to get the crackling going, then cook it at 180 degrees for the duration of the cooking process. You will end up with a succulent and tender pork roast that will melt in your mouth. You are guaranteed to delight your guests and please your family. The kids can also never say no to pork!



Preparation Time: 10 minutes
Cooking Time: 1 hour and 50 minutes
Makes: 7

Ingredients

2kg pork shoulder
A handful of rosemary
3 tablespoons of salt
1 tablespoon of pepper
3 cloves of garlic
Extra virgin olive oil

Method

Get your pork ready for seasoning.

Cut 1cm into the pork sideways making a chequered pattern.



Massage with lots of salt.



Add rosemary.



Add garlic.



Drizzle with olive oil.

Cook on 220 for the first 50 minutes to crisp up the crackling, then cook for 1 hour on 180 degrees.

Check your pork by cutting into the middle of it. If the juices run clear, it is ready.
