Pancakes With Home-Made Apple Sauce

Pancakes are usually enjoyed in the spring time for national 'pancake day', in the UK. However, the recipe for a more seasonal take on the spring time favourites is clearly called for.

Try my pancakes with home-made apple sauce and it will be one of the easiest, quickest dessert you've ever made.

It would be easier to merely serve ready-made apple sauce with these pancakes, but by making the sauce yourself you've the comfort of knowing what's going in, and you can control the amount of sugar being added.

It's a lot more fun making the pancakes and apple sauce from scratch because kids can get involved too, and when your son or daughter helps to make their meal, eating the finished result becomes even more of a joy.

Preparation Time: 5 minutes
Cooking Time: 10 minutes
Makes: 4 servings

1 egg
1 cup of self-raising flour
1 cup of milk
1 orange
3 apples
Tsp cinnamon
Tsp flaked/ground almonds

Place the egg, milk and flour in a bowl.

I always use self-raising flour because it makes them nice and fluffy, American-style.

Whisk until a completely smooth batter has formed and place in the fridge (ideally overnight).

Peel and chop the apples into roughly the same size.

Place the apples in a frying pan with the sugar, orange juice, and spices. You can use orange juice from a carton, but I like to squeeze it directly from the fruit because it caramelises better.

Allow to simmer over a low heat for 10 minutes.

Using a ladel spoon out relatively small pancakes on to a hot frying pan.

Cook for two minutes, then flip over. Repeat with the rest of the batter.

Serve the pancakes on a plate, rolled up, each one next to each other.

Remove the cooked apples from the frying pan and top the pancakes with them.

Add the flaked/ground almonds and dig in.
