Oreo whoopie pies
These colourful Oreo Whoopie Pies are just what you need to brighten up your kid's lunch or dessert!

12 Oreo Cookies
100g unsalted butter
1/2 tsp vanilla essence
1/2 cup caster sugar
1 1/4 cup self-raising flour
1/4 cup milk
100s and 1000s
1/2 cup thickened cream
3 tbsp caster sugar
Preheat oven to 180°C, line a muffin tray with cupcake cases.
Place a oreo cookie in each case.
Beat together butter and sugar until light and fluffy.
Add in the vanilla essence
Add in the egg and beat well to combine.
Sift in the flour.
Add in the milk and stir well.
Stir in the 100s and 1000s.
Pour into the cases covering the oreo cookies.
Bake for 15 minutes or until lightly golden.
Place on a wire rack to cool.
Meanwhile beat the cream and sugar together until stiff.
Cut the cupcakes in half and spread with the cream filling.
