A simple seasonal salad that kids will be drawn to thanks to the bright colours and uncomplicated flavours. This salad is also bursting with beta-carotene, essential for bright peepers.
Preparation Time: 5 minutes
Makes: 2 servings
Ingredients
2 carrots
Handful of green kale
1 rosemary sprig
2 tblsp olive oil
Pinch of black pepper
Pinch of sea salt (optional)
Method
Add to a bowl along with the rosemary.
Rub the kale with olive oil.
Add the kale to the bowl.
I like to let my God-daughter eat this as and when she likes - she won't always reach for the bowl of salad, much preferring what's on her plate, but when it's this bright and colourful, she tends to let her curiosity get the better of her and enjoys every mouthful!
