Orange Chicken Strips

An easy way to make a protein rich dish that can be enjoyed as finger food for kids and grown ups, or as part of a meal for toddlers.



Preparation Time: 5 minutes
Cooking Time: 20 minutes
Makes: 2 toddlers

Ingredients
2 Satsumas
1 Chicken breast fillet
1 garlic clove
5 basil leaves
Kale (optional)
Tblsp olive oil

Method
Slice the chicken into strips, about 5 centimetres in width.



Finely slice the garlic clove.



Halve the satsumas, squeeze out the juice, and add the segments to a bowl.



Add the rest of the seasoning, oil, and sliced chicken strips.



Cover completely in the marinade and either leave to marinate for three hours or cook immediately.

Place the strips in a lightly greased baking tray with the marinade poured on top. Place in the oven for 20 minutes at 180 degrees/ gas mark 4.



Every five minutes baste the chicken strips in the marinade to ensure they remain tender and moist.

Remove from oven and serve immediately.



To make this a healthy dish for toddlers serve with a handful of boiled kale, which can be coated in the rest of the cooked marinade for a slightly-sweet, side of vegetables. The sauce also makes vegetables bearable for little ones, who can kick up a fuss at the sight of anything green.



Roasting the chicken fillets is healthier than frying, so your little ones won't be ingesting too much oil. Roasting the chicken also keeps it quite 'juicy' because you baste it so often.
