A fresh, zesty orange cake that will pack a punch in any lunchbox!
: 10 minutes
: 15-30 minutes
: 12 servings
1/4 cup milk
1/4 cup orange juice
3/4 cup caster sugar
1 1/2 cup self raising flour
1 tablespoon orange zest
(Optional - 1 cup chopped almonds)
Preheat the oven to 180 celsius.
Place the butter in a microwave safe mixing bowl and melt in the microwave.
To the butter, add the milk, orange juice, eggs, sugar, flour and orange zest.
Beat with an electric mixer until well combined.
If you are adding almonds, roughly chop the almonds and fold them into the mixture here.
Pour or spoon the mixture into a lightly greased cake tin, or cupcake tins. Bake for 15-30 minutes, or until the cake is cooked through when tested with a skewer.
