Omelette-Scrambled Eggs With Cottage Cheese
This is a good way to "hide" the vegetables if children do not like them.
Cut them up very finely and they will not be so obvious in the cottage cheese omelette.
I used 2 eggs but only one yolk however it is nicer if you use 2 eggs per omelette.
I have made it into a mixture of an omelette/scrambled egg to make it a bit different.

2 tbsp cottage cheese
1 tbsp grated cheese
Fresh Spinach, finely chopped
Broccoli, finely chopped
Carrots, finely chopped
½ stick celery, finely chopped
1 small potato, finely chopped (optional)
Beat the eggs.
Microwave the carrots, potatoes, brocolli etc. till they are almost done (not the spinach).
Add the cottage cheese to the eggs, and put in the pan with oil. Let it cook for a minute -the cheese will melt, and then if you want to scramble it slightly do so just before you add anything.
Put on the spinach and cook till it wilts slightly.
Add the microwaved vegetables and the grated cheese.
Fold the egg over the vegetables, and cook for another minute or so.
Serve at once, adding grated pepper if required.
This is a healthy, low fat meal, and as stated earlier, if your children do not like vegetables, cut them up a lot finer than I have, so they are partly hidden.
