Noodle fritters

A quick and tasty meal that you can throw together in a few minutes - for those days when you'd rather get take-away but still need to cook.

These tasty morsels can serve for a tasty breakfast, brunch, lunch, snack or light dinner. They are also great to make a couple extra ahead and send in a school lunchbox.

Preparation Time: 5 minutes
Cooking Time: 5 minutes
Makes: 4 servings

Ingredients
2 packs 2 minute noodles
4 eggs
1 carrot
1 zucchini
olive oil
sweet chilli sauce to serve

Method
Boil some water and put the two minute noodles into a container. Pour the boiling water over the noodles. Leave to soften for 2 minutes.

While noodles are softening, grate the carrot and zucchini into a bowl.

Drain noodles and add to the bowl with vegetables, then crack the eggs into a bowl, whisk briefly and add to the noodle mixture.

Stir it all up and put the frying pan on a medium heat with some oil (about 2 tablespoons).

Once the olive oil is sizzling, spoon the noodle mixture onto the pan and fry on one side until set and golden brown.

Flip and fry on the other side.

Serve with sweet chilli sauce or your favourite sauce.
