No-Bake Marshmallow Cheesecake
Cheesecakes come in many shapes, sizes and flavours. But have you ever tried a marshmallow cheesecake? Simple ingredients packed full of flavours, this no-bake method makes it virtually fail-proof!
: 15 minutes
: 2 hours refrigeration
: 4 servings
200g cream cheese (softened)
200g vanilla flavoured marshmallows
1 tbsp lemon juice
Frozen berries, cookies to decorate
Line a rectangular container or loaf pan with plastic wrap.
Place marshmallows and milk in a saucepan over low heat.
Stir the marshmallows until melted. The mixture will bubble but will fade when taken off heat. When completely melted, place aside to cool.
Meanwhile beat the cream cheese in a large bowl.
Add in the marshmallow mixture into the cream cheese 1/3 at a time. Stir well after each addition.
Place the bowl of mixture over a bowl of ice water.
Add in the lemon juice, mix until thick.
Pour half of the mixture into the prepared pan.
Place the raspberry jam into the mixture.
Cover with the remaining marshmallow mixture. Smooth the surface over.
Cover with plastic wrap and chill in the fridge for 2 hours or until set.
Remove from pan when set.
Decorate with fruit, biscuits and other sweets if desired.
