This results in sweet as chicken thanks to the balsamic vinegar, but this chicken and salad combo isn't difficult to make. It's a mere one pot dish with a side salad which adds freshness and crunch.

Makes: 2 servings
Ingredients
5 pieces of chicken
Tblsp mixed spice
3 tblsp Red wine vinegar
Half tsp ground black pepper
1 romaine lettuce head
2 large tomatoes
1 cos lettuce
1 lemon
Method
Add the chicken and spices to a pyrex dish, toss and place in the oven for 1 hour at 150 degrees/gas mark 3.
Whilst the chicken is cooking make up a salad, adding the cos lettuce, tomato, oil juice of half a lemon and a pinch of black pepper to a bowl.
Remove the chicken from the oven.
Either serve the chicken and salad as is, or portion it out so kids can take this to school.
It keeps well in a tub/jar and the chicken seasoning rubs on to the salad leaves, giving it extra flavour.
