New season broad beans make kids grow big and strong..or at least that's what I tell my nephew when I serve him broad beans. Full of fibre and full of flavour, here's a bright, season fresh 'broad bean salad'.
Preparation Time: 2 minutes
Cooking Time: 10 minutes
Makes: 3 servings
Ingredients
8 broad beans
6 baby carrots
3 tblsp butter
2 garlic cloves
Half a lemon
Half tsp ground black pepper
Handful fresh rosemary

Method
Scrub the carrots, wash the beans and place in a saucepan of boiling water, for 10 minutes.
Add the garlic and herbs to a griddle pan.
Add the butter and lemon and cook for 2 minutes over a medium heat.
Add the broad beans and carrots and cook for a further 2 minutes.
Transfer to a dish and serve.
