This recipe is one of my Nan's - a total childhood favourite!
Preparation Time: 10 minutes
Cooking Time: 10 minutes
Makes: 24 large biscuits or 36 smaller biscuits
Ingredients
125gm butter or margarine
1/2 cup sugar
1 egg
1 cup SR flour
1 cup plain flour
1 TB custard powder
Pinch of salt
Jam to fill
Icing mix
Method
Preheat oven to 180 degrees Celsius.
Sift together flours, custard powder and salt. Add to the creamed butter/sugar/egg and mix.
Turn out and knead to a firm dough.
Roll out fairly thin and use a cookie cutter to make rounds.
Bake in a moderate oven, fairly quickly until a pale golden colour.
Join two rounds with jam.
Ice and finish with sprinkles. (I suggest the following icing mixture – 1 cup icing sugar & 1-2 tablespoons of water mixed well).
