A lot of children like nachos and it is a good meal to make where you can hide some grated vegetables. You can add whatever vegetables you can grate finely, particularly if your children are fussy about eating vegetables.
It is a quick and easy stand by with ingredients I always have in my fridge or pantry.

Makes: 1 serving
Ingredients
A few handfuls of corn chips
Grated cheese
Nacho sauce (could substitute tomato sauce)
Grated carrot
Few strips of red capsicum, chopped finely
Bacon, cut up and fried (optional)
Method
I used baking paper on a pyrex dish so I would not have to wash up a dish!
Spread some nachos on the dish and cover with cheese.
Add the sauce and the vegetables of your choice (I used only red capsicum)
Add more cheese and continue layering till you have as much as you want in a serving.
Bake in the oven for about 10 minutes or until the cheese has melted.
