Most children like pancakes and you are not limited in what you can put on, or in them.
In this one I have put a few chocolate chips into the basic mix, and then topped them with mulberries, passionfruit and golden syrup.
Preparation Time: 10 minutes
Cooking Time: 10 minutes
Makes: 4 servings
Ingredients
½ cup self-raising flour
½ tbsp sugar
1 small egg, lightly beaten
90 g milk
Chocolate chips (optional)
About 25 g butter
Mulberries or other fruit
1 passionfruit (optional)
Maple syrup
Cream (optional)
Method
Add the milk, a small bit at a time, making sure there are no lumps in between adding each bit.
I like to let mine stand for a few minutes before starting to cook them.
Heat a small frypan and dob with some of the butter.
Put about ¼ cup in the pan - depending on how thick you want them. I like them thin, so I put in less than that.
Cook for a minute and then add the choc chip bits, if using.
Continue cooking till the top forms bubbles -just a few minutes more.
Turn and cook another minute or two.
Keep them warm in the oven on a very low temperature while you make the rest.
I put some mulberries into the last lot of batter before cooking.
Put all the toppings in small dishes and let everyone help themselves, or spoon whatever you want on each one.
