Mixed berry yoghurt muffins
Not only are berries full of nutrition they are delicious and perfect to use in baking. This muffin recipe is easy to make and packed full of berrylicious flavours.

1 cup flour
1/4 cup caster sugar
1/4 tsp salt
1/4 tsp baking powder
1/4 tsp baking soda
1/2 cup berry yoghurt
3 tbsp olive oil
1/2 cup frozen mixed berries
Preheat oven to 180°C, line a muffin tray with cupcake cases.
In a large bowl sift in the flour.
Sift in baking powder, baking soda, salt and sugar and combine well.
Make a well in the centre and add in the egg.
Using a large metal spoon, fold in half the yoghurt.
Add in one and half tablespoon of olive oil and combine well. Fold in the remaining yoghurt and repeat with the remaining olive oil.
Fold in the mixed berries.
Distribute evenly among the cupcake cases.
Bake for 20 minutes or until lightly golden.
Serve dolloped with extra yoghurt and berries.
