Dutch Pancakes, called Poffertjes in Dutch, are often a favourite for children, and are ideal as they are tiny, and able to be eaten in a mouthful or two.
I have a machine for making these however, if you do not, you can just put a dob (tablespoon) of the batter into a frypan.

Electric machine for Dutch pancakes
Preparation Time: 5 minutes
Cooking Time: 5 - 10 minutes
Makes: 15 pancakes
Ingredients
½ cup plain flour
¾ tsp baking powder
½ tbsp caster sugar
salt to taste
¼ cup milk
1/8 cup water
1 egg, whisked
A few drops of vanilla extract, optional
Method
Combine the flour and baking powder and mix in the sugar and salt.
Pour in the milk and water.
Combine with a whisk, and add the eggs -do not over stir, just combine all ingredients for a short time.
Turn on the pancake pan, brush a bit of oil on the pan, and pour in about one tbsp of batter into each hole. Alternatively make in a large frypan.
When bubbles appear, and the bottom turns lightly brown, use a skewer or similar to turn over the mini pancakes and cook on the other side for a few minutes.
Serve with maple syrup or honey, sprinkle with icing sugar on top, or topping of your choice.
