Mini Chicken and Greens
Mini-meals are adorable and I love preparing smaller versions of my main dish for my niece and nephew, and it saves having to make two different meals. See the recipe below for a mini version of chicken and greens.
: 5 minutes
: 45 minutes
: 2 servings
Handful fresh cavolo nero
2 pieces of chicken
Handful fresh rosemary
3 garlic cloves
Tbslp coconut oil
Add the chicken to a bowl with all of the seasoning. Allow to sit for at least 5 minutes.
Crush the garlic cloves and add to a griddle pan along with the coconut oil. Cook for 5 minutes over a medium heat.
Add the chicken and lemon to the pan and cook for 45 minutes.
Keep moving the meat around.
After 30 minutes the meat should have browned all over.
Cover with a lid and turn the heat to a simmer for 10 minutes.
Remove the lid and add the kale. Cook for 5 minutes.
Transfer to a plate and serve.
Tasty and just enough for one, dinner is served.
