Mickey Mouse Cupcakes
Mickey Mouse is one of the most loved Disney characters of all time. Kids from all over the world can easily recognise his signature big round ears and bright red pants. Here is a fun recipe to make for birthday parties or even just as a treat!
: 15 minutes
: 30 minutes
: 6 servings
3/4 cup flour
1/3 cup caster sugar
1 tbsp cocoa powder
1/2 tsp baking soda
Pinch of salt
1/2 cup cold water
3 tbsp vegetable oil
1/2 tsp vanilla essence
12 Mini Oreos
3 tbsp butter
2 tbsp cocoa powder
3/4 cup icing sugar
3 tsp milk
6 Red cupcake cases
Preheat oven to 180°C, and line a muffin tray with cupcake cases.
In a large bowl sift together the flour, baking soda and salt.
Add in the sugar.
Sift in the cocoa powder and combine well.
Make a well in the centre and add in the water, vegetable oil and vanilla essence. Stir with a large metal spoon and combine well.
Distribute the mixture among the prepared cupcake cases.
Bake for 18-20 minutes or until a skewer inserted comes out clean. When ready transfer to a wire rack and cool.
Meanwhile in a large bowl melt the butter in the microwave.
Whisk in cocoa powder, icing sugar and milk until the icing comes together. Refrigerate for 10 minutes for it to set.
Using the hole puncher, cut out white circles and stick on the outside of the cupcake cases for Mickey's pants.
When the cupcakes are completely cooled, use a knife or spatula to ice the tops of the cupcakes.
Add a mini oreo to each side of the cupcake for Mickey's ears.
