These tacos are loaded with beefy chili con carne and freshy guacamole salsa. They are wonderfully seasoned, addictive and crunchy. The perfect snack meal in Winter.
These beef tacos are definitely at the top of Princess P's list of favorite foods. When she detects the tomato-red wine beef smell, she sticks around the kitchen like a bee on a honey pot.
Preparation Time: 10 minutes
Cooking Time: 30 minutes
Makes: 4 servings
Ingredients
10 taco shells
300g pre-made
beef & red wine chili con carne / or
2 tablespoon olive oil
300g beef mince
1 small brown onion
1 can Mexican chili beans
1 packet
Mexican seasonings
500g freshly made
Mejico Guacamole / or
1 ripe avocado
1 truss tomato
2 cups
mixed Mexican cheese
1 green scallion
Method
Alternatively, heat up the oil on a heavy skillet and brown the mince and the onion.
Add the Mexican beans, crashed tomatoes and Mexican seasonings. Stir and combine well.
Simmer for 10 minutes or until the sauce thickens slightly.
Garnish with fresh green scallions. Season with salt and pepper.
Line the baking tray with baking paper. Place taco shells slightly apart on tray, leaving in the ''wedge' at the centre of the shells.
Heat for 5 minutes or until warm & toasty.
Spoon 2 tablespoons of the chili con carne mixture into each taco shell.
Top with
Mejico Guacamole/ or plain smashed avocado, green scallons/ or lettuce and loads of Mexican cheese.
This batch turned out really good. Perhaps I have re-heated my
beef & red wine chili con carne sauce, it was so full of flavour. Together with the refreshing
Mejico Guacamole, they were so moreish – we all LOVED them.
