Makes: 2 servings
Ingredients
1 large sweet potato
6 aspargus stems
Half a broccoli head
Tblsp coconut oil
Half tsp ground black pepper
Half tsp ground cinnamon and nutmeg
Bunch of fresh rosemary
Method
Slice the sweet potato lengthwise into 'fingers' and steam for 10 minutes.
Add the rosemary black pepper and half of the coconut oil to a griddle pan and warm for 2 minutes.
Add the coconut oil and cook over a medium heat, tossing every 5 minutes for 30 minutes.
Wash the broccoli and asparagus in a sieve.
Place the sieve on top of a saucepan of boiling water and place a lid on top. Steam for 10 minutes.
Add the sweet potato to a large serving plate so kids can help themselves.
Serve the vegetables alongside the potato and tuck in.
