Snowballs are one of my favourites, but sometimes I can't find them in the store, so I turn to this quick and easy snowball recipe to turn marshmellows into mini snowballs. All it takes is a pack or marshmellows and some chocolate, melt, dunk and sprinkle with some coconut and you're done!
Preparation Time: 10 minutes
Makes: 12 servings
Ingredients 50g of marshmellows
50g of dark chocolate
50g of desiccated or shredded coconut
Chop or break up the chocolate and place it in a heat proof bowl.
Fill a saucepan with water and heat on the stove top until simmering.
Place the bowl containing the chocolate in the pan over the simmering water, making sure that the water doesn't quite touch the bottom of the bowl.
Heat, stirring, until the chocolate in completely melted.
Remove from the heat and bring the chocolate to the bench top.
Lightly grease a baking tray or flat plate and set aside.
Place several marshmellows at a time into the chocolate and use a spoon to coat each one.
Once coated, remove each marshmellow with a toothpick or skewer. Allow any excess chocolate to run back into the bowl, then place the marshmellow onto the greased plate.
Repeat with all of your marshmellows.
Sprinkle coconut over the chocolate covered marshmellows.
Allow to set in the refrigerator for at least 1 hour.
Once the chocolate has hardened, eat straight away or store the snowballs in an airtight container.
Drop a few snowballs into a resealable plastic bag for a surprise lunchbox treat!
