Marshmallow Jelly Lollies
This recipe combines two classic favourite treats-marshmallow and jelly to make these soft and wobbly Marshmallow Jelly Lollies. Don't forget to substitute with your favourite jelly flavour!
: 10 minutes
: 4 hour refrigeration
: 4 servings
3 egg whites
3 tsp caster sugar
˝ cup cold water
˝ cup boiling water
5 tsp gelatin powder
1 packet of jelly crystals (flavour of choice)
Desiccated coconut to serve
In a large bowl beat the egg whites until stiff peaks and set aside.
In a large bowl combine the jelly crystals, gelatin powder and sugar together.
Add in the boiling water and stir to dissolve the crystals.
When dissolved, add in the cold water. Set aside to cool.
When the mixture is cool, lightly beat the jelly mixture and egg whites together.
Pour into silicone pans or containers and refrigerate for 4 hours or until set.
Sprinkle with desiccated coconut and cut into smaller slices to serve.
