This is possibly the easiest and quickest salad to whip up, and it has a sweetness thanks to the fibrous mango.
Preparation Time: 5 minutes
Makes: 2 servings
Ingredients
1 mango
Handful of spinach
Half a lime
Handful of fresh kale
2 basil leaves
1 yellow pepper
3 tblsp olive oil
Half tsp black pepper
1 tomato
Method
Wash the kale and spinach and place in a large bowl.
Halve the mango and carefully slice 'fingers' into the flesh.
Add the pepper and mango to the bowl.
Season the salad and add the tomato, in chunks.
Squeeze over the lime, or lemon for that matter.
This salad works beautifully alongside chicken. Bright colours certainly make salads go down a lot easier in our household.
