Ingredients
10 frozen fish fingers
1 cup corn kernels
1/4 of an avocado
1 tablespoon sweet chili sauce
2 tablespoons sour cream
1/2 teaspoon lemon juice
1 teaspoon chopped chives
Method
Cook the fish fingers according to their packet instructions. While they are cooking, prepare the dipping sauce.
Peel and chop the avocado into small pieces. Combine these in a bowl with the drained corn kernels.
Add the sour cream, lemon juice and chives and stir to combine.
Add the sweet chili sauce and stir to combine.
Spoon the dipping sauce into a smaller bowl to serve, with a side of fish fingers ready for dipping.
