Cupcake decorating can be a fun family activity and not to mention delicious too! These Little Piggy Vanilla Cupcakes are a great way to get kids involved, they might come up with other interesting animals and characters too.

Makes: 5 servings
Ingredients
50g unsalted butter, softened
1/4 tsp vanilla essence
¼ cup caster sugar
1 egg
¾ cup self-raising flour
2 tbsp milk
Icing
50g butter, softened
¾ cup icing sugar
½ tbsp. milk
Red food dye
Decoration
15 pink marshmallows
10 milk chocolate bits
Method
Preheat oven to 160°C, line a muffin tray with cupcake cases.
Beat together the butter and sugar until light and fluffy. Add in the vanilla essence.
Add in the egg and beat well to combine.
Add in half the milk. Repeat until all ingredients are used, stir to combine.
Distribute the batter evenly among the cupcake cases.
Remove from the oven and transfer onto a wire rack to cool.
Meanwhile for the icing, beat together the butter, icing sugar and milk to combine. Add in a small drop of red food dye and beat well.
When the cupcakes have cooled, use a knife or spatula to ice the tops of the cupcakes.
Place two choc bits for the eyes.
Cut the marshmallow in half, pinching one of the ends to create the ears. Place it on top of the cupcake.
For the nose, use a toothpick and dab a drop of red food dye to draw on the nose or if you have confetti at home, dab it in a bit of the icing to stick onto the nose.
Note: You can adjust the amount of red food dye added into the icing mixture for a darker shade of pink. Make sure you don't add too much or it'll come out very bright red!
