With Halloween but a month away, it is time to start thinking about what terrifying treats you are going to make. Here I've made three ghoulish mini loafs that children can enjoy for a Halloween party. Based on the brands I used, each slice is about 142 calories.
Preparation Time: 2hrs 40 minutes
Cooking Time: 25 minutes
Makes: 3 mini loaves or one big loaf
Ingredients 200g self raising white flour
100g golden icing sugar
50g caster sugar
100g dried cranberries
green food colouring
Pour boiling water over the cranberries and leave them to soak for about two hours.
Pre-heat the oven to 180 ༠C/ 160 ༠C fan/350 ༠F/4 Gas.
Cream the butter with sugar.
Beat in the egg.
Add a few drops of green food colouring until it is the shade of green you want.
Drain the cranberries, then mix into the flour.
Zest and juice two limes, then add to the flour and cranberries.
Fold into the egg mixture and, if necessary, add a bit more food colouring.
Spoon the mixture into three mini loaf cases or one large loaf tin.
Bake in the oven.
Zest and juice the last lime, and stir into the icing sugar until it becomes a smooth paste.
Add a few drops of green food colouring and stir in.
Spread the icing over the cakes, and let it ooze down the sides.
