Lemon Slice

The perfect lunch box treat with a tangy twist! The slice's lemon icing makes this a fantastic summery snack with a light zing of flavour that is not too sweet and not too sour.

Preparation Time: 15 minutes
Makes: 20 servings

250g of crushed sweet biscuits
1 cup of desiccated coconut
110g of butter
200ml of condensed milk
The rind of 1 lemon
1/2 cup of lemon juice
Icing sugar


Line a slice tin with silver foil.

In a microwave safe bowl, melt the butter and stir to remove any lumps. Microwave on high for 1 minute, mix, then microwave for 20 second bursts, mixing between each, until the butter is entirely melted. You can also do this in a saucepan over the stove top - place the butter in a pan and heat, stirring, until the butter is melted. Then add the coconut, mix through, and transfer this to a mixing bowl and continue on, adding further ingredients to the mixing bowl.

Add the coconut into the butter and sugar mixture. Stir with a spoon until well combined.

Add the lemon rind and stir through.

Crush the biscuits in a bag with a rolling pin to form a rough dust, then pour the biscuit crumbs into the butter mix.

Stir through until completely combined and until all of the biscuit is well coated in butter mixture.

Make a well in the centre of the biscuit mixture and pour in the condensed milk.

Mix well, pressing the biscuit mixture into the condensed milk, until all of the condensed milk is combined into the biscuit mix.

Pour the mixture into a slice tin and press down firmly with a spoon until the mixture forms a flat layer of slice. Refrigerate to set while you make the lemon icing,

To make lemon icing, mix the lemon juice with icing sugar until thick. Spread the icing over the lemon slice, then refrigerate to set for another 20-60 minutes. You can also mix in a small lump of butter with the lemon juice and icing to make extra creamy, thicker icing!

Once set, slice into pieces.
