Lemon and honey cake

Adapted from a healthier desserts cook book, I whipped up this honey and lemon cake when everyone needed cheering up. Not only were the youngest in our family smiling, but the adults too. All with a little lemon, honey, and the holy trinity of eggs, butter and sugar.



Preparation Time: 10 minutes
Cooking Time: 35 minutes
Makes: 10 servings

Ingredients
1 lemon
280g plain flour
150g caster sugar
50g honey
Tsp cinnamon
3 large eggs
180g unsalted butter
Half tsp bicarbonate of soda/baking powder
180g of Greek yogurt

Required ingredients


Method
Place the butter, sugar and honey in a food processor/beat with a hand mixer, until pale and fluffy.



Add the eggs one at a time, beating after each one.



Add the yogurt, and combine.



Fold in the flour, bicarbonate of soda/baking powder and cinnamon.



Combine until smooth.



Pour into a greased loaf tin and bake for 35 minutes at 175 degrees/between gas mark 3 and 4.



Remove from the oven and allow to cool for at least 30 minutes on a wire rack.



Dust the cake with icing sugar using a sieve.



Grate the lemon over the cake.



Slice into serving portions.



Enjoy.

How much yogurt goes in this? As far as I can see, the recipe doesn't say... Thanks.
Hi there,

The recipe says to add yogurt but there is no yogurt in the ingredients list. Can you tell me asap how much yogurt to add? Hoping to make this this arvo.
