Lebanese food is great for the kid with mild tastebuds. I whipped this up for a friend who was serving kids and grown ups. The non-spicy, but well-flavoured, herby chicken is a treat for all.

Makes: 5 servings
Ingredients
1 lemon
Tsp cinnamon
Thyme
1 red onion
3 garlic cloves
6 chicken thighs
Black pepper
Cube of ginger

Method
Add the herbs and grate the lemon into the baking tray.
Add the rosemary and cinnamon.
Add the chicken, add the ginger and toss.
Place the tray in the oven for 45 minutes at 180 degrees/gas mark 4.
Slice the ginger and onion finely.
Remove from the oven and add the sliced onion.
Place the tray back in the oven for 15 minutes.
Serve alongside tabbouleh, flatbread and a yogurt dip for an authentic Lebanese lunch.
