Kid Version of Meat & Two Veg

This classic British version of a meal is made all that more quaint in mini version. Here's the how-to, below.



Preparation Time: 2 minutes
Cooking Time: 1 hour
Makes: 2 servings

Ingredients
2 carrots
2 pieces of chicken
Bunch of broccoli
Tsp mixed spice
Handful of thyme leaves
Tblsp coconut oil
Pinch of salt
Pinch of black pepper
Pinch of rosemary

Method
Add the chicken and all of the seasoning, save the spices, to a sieve and place on top of a saucepan of simmering water. Cover with a lid an allow to cook for 45 minutes.



Chop the ends off the carrots and wash the broccoli.



Remove the chicken from the stove, remove the lid and add the coconut oil and mixed spice.



Add the carrot and broccoli to the water simmering beneath the chicken. Place back on the hob for 15 minutes.



Transfer the meat and vegetables to a plate/bowl.



Garnish with fresh rosemary for flavour and prettiness and serve.
