Kale & Beef Omelette with Cheese

This is one hands-down omelette. It is packed with super healthy kale, nutritious beef and creamy cheese. The prefect school holiday meal that satisfies the hungry kids.

This omelette is super-fast to whip up and is perfect for days when your fridge is running a bit bare and kids are yelling for food. By adding kale to an omelette, it is a winning combination plus it is a balanced healthy meal.

Start the day with a goodness-filled breakkie omelette!

Have you heard of kale?
Kale is the new 'super-veggie'. It is low in calories, high in fiber, protein, vitamins and minerals; some says it is better than green broccoli. It is a green powerhouse vegetable with many benefits. Bonus: it tastes better than spinach.

Preparation Time: 15 minutes
Cooking Time: 10 minutes
Makes: 2 servings

3 eggs
1/8 cup milk
1 tablespoon butter
200g kale leaves
2 beef sausage mince
1/4 mixed shredded cheese
150g mixed salad lettuce
Salt and pepper to season

Roughly chop kale leaves into bite sizes.

Place cooked beef sausages in the food processor and grind until fine.
Thoroughly beat the eggs and add in the milk.

Melt the butter in the pan on low-medium heat.
I am making a half and half omelette, cook kale & minced beef as shown so that the half stay separated.

Pull the pan off the heat to allow to cool.
Once the pan has cooled a little, add the egg mixtures to cover all ingredients.

Once the eggs have set a little, lift the pan off the stove and shake & swirl the pan a little so that the omelette isn't sticking.
Tilt the pan to the sides so the running yolk go over to the edges of the pan.
When the eggs are almost done, add in the cheese.
Fold in halves when cheese has melted.

Garnish with some garden salad.
Season with salt & pepper.

A very yummy morish meal that the kids will enjoy their greens.

If you really want your kids to enjoy and ask for more greens, serve some crispy kale chips with this omelette. You will all be fighting for the last bite! :)
