Jammy Thumb Prints

Children will have fun making jammy thumb print biscuits. They are quick, easy, and make great treats for a birthday party.

Although biscuits are never going to be particularly good for you, I have used the healthier options when it comes to ingredients. For example, wholemeal instead of white flour has more fibre, and a delicious nutty flavour; I also used Truvia sweetener, which has no calories and virtually no glycemic index. Because sweeteners taste sweeter than sugar, you don't need to use as much either. Based on the brands I used, each biscuit is about 78 calories.

Although I only used apricot jam, you could use all different flavours to make an attractive and looking party selection to suit different tastes.

Preparation Time: X minutes
Cooking Time: 15 minutes
Makes: 16 servings

Ingredients
225g wholemeal self raising flour
100g Flora Original margarine
30g Truvia sweetener (or 100g caster sugar)
1 egg
1 tbsp unsweetened almond milk
2 tbsp reduced sugar apricot jam

Method
Pre-heat the oven to 190 ༠C/ 170 ༠C fan/375 ༠F/5 Gas.
Mix the flour and sweetener together.

Rub in the margarine to create a breadcrumb like texture. You can do this by hand or with a food processor. Kids will probably like to get their hands stuck in.

Beat in the egg and milk to form a dough.



Divide the dough into into sixteen round balls.



Push your thumb into the centre of each ball to form an indent.



Spoon in a dollop of jam into each indentation.




Bake in the oven.
