Jammy Biscuits

Biscuits are made all the more fun by turning them into shapes, but you don't need lots of different shaped cutters to achieve it. A set of round cutters can still create interesting looking biscuits.

Preparation Time: 40 minutes
Cooking Time: 10 minutes
Makes: 24 servings

Ingredients
250g wholemeal plain flour
100g margarine
30g Truvia sweetener (or 100g caster sugar)
1 egg
1 tsp vanilla extract
180g strawberry jam

Method
Pre-heat the oven to 180 ༠C/ 160 ༠C fan/350 ༠F/4 Gas.



Cream the butter with the sweetener/sugar.



Beat in the egg and vanilla extract.



Fold in the flour to form a dough.

Roll out the dough and use a cookie cutter to cut out twenty-four round biscuits.

Use a smaller cookie cutter and cut out twelve smaller biscuits from twelve of the larger ones.
Bake in the oven.

Spread jam over the large biscuits and stick the left-over rings on top.

Spread jam over the smaller biscuits and sandwich them together.
Leave the jam biscuits to set.
